Summary

This is a Gateway qualification and it will cover a range of units including practical cooking skills and customer service while working in one of our food outlets. The assessment will be through portfolio building and gathering evidence throughout the year, to demonstrate competence on each of the units.

The units to be covered:
Preparing and baking Bread and dough products
Preparing and baking Cakes, sponges, scones and biscuits
Preparing and cooking Poultry dishes
Preparing vegetable dishes
Preparing and cooking meat dishes
Introduction to customer service for travel and tourism
Career planning
Customer service for Hospitality
Communication skills

Students will be actively involved in the Debut Café and also Debut Restaurant ( depending on the timetable) and will gain valuable food service and customer service skills.
This is an introduction to level 2 and it will then lead into VRQ Level 2 Diploma in Culinary skills as a second year.
Full chefs whites are required for the practical kitchen skills classes and Black uniform for the front of house classes.

Entry Requirements

Achieve 3 GCSE's at grade 3 or above, including English Language and maths.

Learning Outcomes

All of the units identified above will be achieved.

Objective

It will give you the skills and knowledge you need to work with minimum supervision and a recognised qualification when you successfully complete the course.
Work experience is also actively encouraged to develop work skills and build confidence.

Assessment

This will be done by practical assessments and completion of a portfolio of evidence for each unit.

Progression

Progression will be onto a VRQ2 Diploma in Culinary skills, which is a one-year program where students will be given the opportunity to develop their cooking skills and refine their presentation skills. Students will also be working in Debut Kitchen on Lunch service. They will also develop their pastry skills and kitchen skills including pasta, sauces , cold desserts, presentation skills and time management.

Career Progression

Working with the service sector, or other catering and hospitality outlets.

Fees

If you are under 19 years old on the 31st August prior to the start of your course, your registration and tuition fees will be funded by the government. There will be additional costs for uniform and equipment. You can use pre-existing uniform and equipment if it is in an acceptable condition. Costs are approximately £250.
