What You Will Study

Join us for an immersive and hands-on baking experience that covers a wide range of techniques and recipes over several weeks. Each session will dive into a unique aspect of baking, combining tradition with creativity and will be led by British Baker's Young Baker of the Year (2023), ensuring you receive expert guidance from a true professional.

Week 1: Bread History & Tasting - Discover the fascinating history of bread, complete with a fun quiz and a bread-tasting experience.

Week 2: Bread by Hand - Learn to mix, prove, and bake bread from scratch in a 3-hour session. A perfect introduction to mastering homemade loaves!

Week 3: Rough Puff Lamination - Uncover the art of lamination as you make delicious apple/fruit puffs with cream filling and mini sausage rolls. Explore the versatility of pastry, from sweet to savoury.

Week 4: Cake Week - Create Swiss rolls and Yule logs, mastering buttercream fillings and exploring different flavour jam options. Develop your pallet knife skills while paying close attention to baking time.

Week 5: Biscuit Week - Perfect your biscuit-making with shortbread, shortbread with inclusions (chocolate chips/dried fruit), and Viennese biscuits. Learn piping techniques and understand the different fat-to-flour ratios for various biscuit types.

Week 6: Waste Not, Want Not - Learn to reuse ingredients creatively, such as baking almond croissants with homemade almond frangipane cream and getting the most out of breadcrumbs. Discover the value of cake crumb and scraps with fun, waste-free ideas.
